My love for baking has not died here in NY, as my expanding waist size can attest and I am learning how to get around some of the problems the altitude and humidity originally caused for me. I was mostly having issues with cookies. I have been baking cookies a lot lately so Anton has something to snake on while he studies and dose the ten thousand hours of reading required for his job. I have so far perfected the chocolate chip cookies that were giving me grief and even though I am not a huge chocolate chip cookie fan, I must admit that they are tasty. And I am happy to boast that I made the best peanut butter cookies know to man the other night. Knowing now what flaws there might be in my recipe mixed with NY climate, I adjusted from the get go and they turned out perfect!! Anton loved them which was the highlight for me. He even suggested that we give one to Paul and anyone who knows Anton, knows that giving our child a 'real' cookie is a big no no. Paul loved it! He kept asking for another one, and cried when we said no. :( It was really hard to distract him enough to get the cookies hidden.

I have found and altered a few yummy recipes for Paul's benefit as well. Two recipes in particular are our favorites. The homemade cheese crackers (ok no so much a cookie, but it's still baked), which we both love! And I have a recipe for animal crackers, that taste like sugar cookies, but have hardly any sugar. Both snacks are made from whole wheat flour. I make both of them about once a week. And we snack on them at the park. We also eat quite a bit of banana bread since banana's don't last here in the heat and I have tried making granola bars, but haven't found a recipe that's very healthy that we like.





I must add a disclaimer to this post and mention that the thing that we snack most on is fruit. We don't eat cookies all the time, but since I obviously didn't make or grow the fruit, it isn't as exciting to talk about. :)
